Apprenticeship Summary

Brasserie Zedel is a large and busy brasserie in the heart of Piccadilly London, clearly focused on classic French cuisine. Everything on the menu is made on-site from scratch using fresh, seasonal and local ingredients. They have weekly specials and seasonal menu changes so you will see the evolution of a dish from concept to plate.

Brasserie Zedel has a dedicated team of full-time chefs in the kitchen, this wealth of experience and knowledge will give our apprentices a great opportunity to learn the skills needed to become a professional chef.

This Chef Apprenticeship position will teach you the preparation and cooking of dishes using fresh ingredients including meat, fish, poultry, and vegetables. In addition, you will learn about, French cuisine food hygiene, health and safety, storage, and cleaning.

**From SEPT 24 Level 3 Pastry Chef Apprentices will learn preparation, service and detailed MEP, in a dedicated pastry section with a professional team of 6, run by head pastry chef Piotr Trojanowski. Piotr has a huge amount of pastry experience and is particularly focused on French handmade and freshly made pastries and desserts.

Requirements and Prospects

  • GCSE English and Maths grades A-D / 3-9 (or equivalent)
  • GCSE Cookery/Food Tech desirable

Further Information

An interest in French cuisine traditional or modern is a must. This will be a 9am to 5pm position with a 30-minute break in the morning and 15 minutes in the afternoon. You will be expected to be punctual dressed appropriately, (Clean hair tied back and wearing a chef's uniform, which we supply) and equipped with a knife kit.

Training to be provided

  • On-the-job training 4 days a week and 1 day a week at WKC Commis Chef Apprenticeship
  • Standard Functional Skills English and Maths at Level 1, progressing to Level 2
